ROOTED IN BREWSTER, LOVED BY ALL

ROOTED IN BREWSTER, LOVED BY ALL

Before the golf balls, burgers, and big scoops—it all started with a little custard stand on Route 6. Over the decades, Red Rooster has grown, evolved, and stayed true to what matters most: good food, good times, and being part of the community. Here's how it all came together.

Where Sweet Memories Begin

1963 – Just Custard, Just Right

We opened our doors as a simple custard stand on Route 6, serving up sweet treats and laid-back vibes to locals and travelers alike.

THE BIG CONE AND BIGGER DREAMS

In 1967, Heinz Tiede took over and gave Red Rooster its iconic chalet roof and giant rooftop cone that still towers over Route 22 today. With new menu items, outdoor seating, and year-round hours, it quickly became more than a custard stop—it became a destination.

KEEPING TRADITION, ADDING FLAVOR

By the 1990s, Red Rooster was already a neighborhood legend. Joseph Fiore stepped in to carry on the legacy, adding his experience and passion for the food industry while keeping the focus on family, quality, and community.

THE PEOPLE BEHIND THE COUNTER

For decades, familiar faces like Andy Lintzeris, Jon Callahan, and longtime manager John “Jack” Sypek helped shape the Rooster experience. Their dedication and love made Red Rooster feel like more than a restaurant—it became family.

A LEGACY THAT LIVES ON

Today, with Joe Jr. joining the team, Red Rooster continues to blend nostalgia with new energy. Generations of families still stop by for burgers, fries, and ice cream, proving that some traditions are too good to fade.

1967 – New Owner, Big Vision

Heinz Tiede, a former Carvel manager, takes over with fresh ideas and a passion for creating something truly special.

1970s – More Than Ice Cream

We expanded the menu, added mini golf, opened up outdoor seating, and welcomed guests year-round—it became more than dessert, it became a tradition.

1993 – The Fiore Era Begins

Joseph Fiore stepped in to carry the Rooster forward, blending old-school charm with a few new twists.
